  • Costco Stock up Trip......

    It's time for our monthly Costco trip! Can I just say that I love, love, love Costco? In fact, I would do all of our shopping at Costco if possible. I love the benefit of one-stop and bulk shopping. The advantages and disadvantages have been discussed at length on the web. But for our family, Costco is the best and most economical on a major portion of the items we buy in the Taylor household.  Here is my shopping list for my trip. I have been known to pick up a few extra items as well.  This list changes monthly as far as cooking oils, spices, canned or frozen goods, etc.

    Dairy:

    Milk

    Eggs

    Sharp Cheddar Cheese block

    Slice Cheddar Cheese slices for sandwiches( Tillamook!) 

    Meats

    6 lb pkg Butterball ground turkey

    5lb pkg  Kirkland 93/7 low fat ground beef

    10lb bag frozen chicken breasts

    2 Coscto Rotisserie Chickens ( at $4.99 these are a great deal)

    1 pkg beef roasts or some kind of beef(sale??)

    1 pkg Onion and Garlic Pork loin  

    1 pkg Kirkland Honey Ham for sandwiches

    Grocery/Pantry

    Kirkland brand 100% whole wheat bread loaves

    Goldfish of Cheez- Its

    CostcoTrail Mix

    Campbell's Healthy Request cooking soup

    Some sort of granola bar or cereal bar

    Crunchmaster crackers

    That is the list for this month. Next month may be the same or different depending on what the freezer or panty needs. Plus I have a $16.xx Costco certificate left to spend from upgrading to Executive membership a few months ago !

  • Cooking and Baking Day

    Since I started working full-time again, I have been cooking as much for the week on Sundays as possible. Here is what I accomplished today. Meal plan for the week will follow. I work 12 hour shifts so I try to make at least 3-4 more on Sunday and a leftover day. So that means, I cook once and we eat several times. Getting home after eight at night and having to be up at 5 in the morning is not very condusive to nightly cooking, so this seems to be working for us right now.

    Today I made:

    1 dozen mini and 6 full size Double chocolate chip muffins (from a Duncan Hines mix)

    12 Pumpkin muffins, 6 Chocolate Chip Pumpkin muffins, and 1 loaf choco-chip pumpkin bread-- I used this recipe and added chocolate chips.  

    1 Sausage and Potato Chowder (makes enough for lunch and leftovers)

    1 Big pot of  Spicy Kale  

    3lbs of Crock Pot Mexican Chicken to be used for Chicken Burritos, Chicken Fajitas and Slow Cooker White Chicken Chili (most will be frozen for later meals)

    3lbs Crock Pot Chicken Tenders for Chicken Spaghetti, and other casseroles later

    12 Meatloaf muffins (used a regular meatloaf recipe and cooked in a muffin tin)

    Sunday: Mini meatloaf muffins, mashed potatoes, sweet peas, spicy kale

    Monday: Chicken Spaghetti, Salad, Garlic Bread

    Tuesday: Chicken Burritos, Black Beans

    Wednesday: Pork Loin, Augratin Potatoes, Broccoli

    Thursday: Leftovers

    Friday: In laws in town

    Saturday: Cheddar Ranch Turkey Burgers, Baked Fries, veggie

  • Menu Plan Monday

     This week will be my first week working as a new RN so meals need to be simple or prepared ahead of time. DH is also working 12 hour days this week, so it will be close to 6pm before I get home and pick the children up from after school care. So, the crock pot will be my friend this week.  I shopped at Target and Wal-mart this week for-going the Publix deals and fighting the Costco crowd to keep my sanity. You may also see convenience items throught the week. Here is what I have planned:

    Sunday:

    Slow Cooker Three Packet Pot-Roast

    Creamy mashed potatoes

    Green lima beans

    Crescent rolls

    Monday:

    Just 4 Kids Ranch Cheeseburgers using ground turkey and whole wheat buns

    Baked French Fries

    Veggie

    Tuesday:

    Slow Cooker Apricot Pork Loin

    Rice

    Green Beans

    Wednesday:

    Slow Cooker Chicken and Stuffing Casserole

    Steamed Sweet Peas

    Thursday:

    Leftovers

    Friday:

    Slow Cooker Red Beans with Smoked Turkey Sausage

    Rice

    Collard Greens

    Cornbread

    Saturday:

    Zesty Chicken and Broccoli Alfredo

    Garlic Toast
